Tunisia produces on average 130,000 Tons/year of tomato double concentrate paste. 80,000 tons are consumed locally (60%), the remaining causes export problems (Tomato double concentrate paste is not highly consumed).
The solution would be to direct the transformation towards new products demanded at the international level (peeled tomatoes, crushed tomatoes, ketchup, dried tomatoes, tomato triple concentrate).
